Guac-YOUR-mole!



I am crying right now...out of one eye. Onions have that effect on my right eye.




I think God would approve of salsa and guacamole. The best of His vegetables (and fruit) chopped up and mixed together forming culinary harmony. Ahh....I don't think, however, that He would approve of chips. Just a hunch. I mean, just think of it: He watches in horror as we mash up corn, spread it out, cook it in fat, and eat vast amounts of these crunchy delights, while our arteries scream in protest.




Jeremy is my kindred spirit on this (and many other things). He plopped a bag of avocados in our cart while we were at Costco.




"We'll need chips," I said, barely containing my excitement.




"Hee hee hee!" He conceded.




So, I thought today would be a good day for guacamole. Unfortunately, I didn't have all the ingredients. Poop.




BUT, thank heaven for the World Wide Web. I found an alternative recipe that only required what I had on hand. Who knew I would ever need that bottle of Coriander?




I'll have to see what Jeremy thinks of it. He is the Guacamole King. I have yet to live up to Becky's oh-so-fabulous guacamole. Jeremy talks about it from time to time, salivating all the while. I suppose I should let go of that subliminal part of me that glares at Becky when this happens...

oh sweet Dara, perfection is a process and it took many attempts to finally find the right combination and a very stubborn spouse who insisted that I add "this or that"

Yeeesss....I internalized the cream cheese fact when you were here. I don't have any, though, which makes perfecting guacamole very difficult... :D

I didn't start liking Guacamole until I was pregnant with Audrey... A weird craving that stuck.
